Sweet Potato Pizza
Serves 4 Time: 45 minutes Difficulty: Intermediate
Ingredients
- 1 sweet potato, peeled and sliced into 1/8-inch slices
- ¼ cup pecans, chopped
- 6 tablespoons unsalted butter, softened
- 4 tablespoons brown sugar
- 3 tablespoons flour
- ½ teaspoon ground cinnamon
- 1 cup mini marshmallows
- 1 portion Blackstone pizza dough
Directions
- Preheat Blackstone pizza oven to 325 degrees. NOTE: You want the Pizza Oven at a low temperature because the sugar in the marshmallows and crumble mix will burn if too hot.
- Place sweet potato slices in a medium saucepot, cover with water and boil for 25 minutes or until fork tender.
- Roll out pizza dough and spread 1 tablespoon of butter around on the dough. Layer sweet potato slices on the dough.
- Prep crumble: Combine remaining butter, sugar, flour, and cinnamon in bowl and set aside. NOTE: Don't put this on the pizza yet. The sugar will burn too quickly in the Pizza Oven.
- Cook the pizza for about 3 minutes or until crust starts to brown. Remove pizza and spread crumble and marshmallows over the top and return to the oven for another minute until the marshmallows are slightly toasted.
