Place shrimp in a mixing bowl. Generously season with tequila lime seasoning. Toss well to coat evenly.
In a separate bowl, mix: mayo, lime juice, black pepper, and honey. Stir until smooth and creamy. Set aside.
Heat a griddle or skillet to medium-high heat. Cook the shrimp until pink and cooked through, about 2–3 mins per side. While cooking, squeeze fresh lime juice over the shrimp.
Toss the tortillas on the griddle just until warmed and slightly toasted.
Lay out the tortillas and fill each one with a generous scoop of shrimp. Add slaw (if desired) on top. Drizzle with taco ranch dressing. Sprinkle more tequila lime seasoning and fresh chopped cilantro over each taco.
