Heat the griddle to medium-low. Place the queso in a small saucepot and set it on the griddle to warm. Add 1 to 2 teaspoons of oil to the griddle and sauté the diced jalapeños and sliced onions until softened, seasoning with salt to taste. Once the vegetables are done, move them to the side or remove them from the griddle.
Add another teaspoon of oil and place the burger patties on the griddle. Season them with Blackstone Tequila Lime seasoning. After 2 to 3 minutes, flip the patties and season the second side. Place a slice of cheese on each patty. To melt the cheese, squirt a little water around the patties and cover them with a basting dome until the cheese is fully melted.
If you're making double burgers, stack two patties on top of each other and top with the sautéed jalapeños and onions. Toast the hamburger buns on the griddle until golden and crisp.
To assemble, spread chipotle mayo on the bottom half of each bun. Place a single or stacked patty on top, add a generous scoop of guacamole, and finish with the top bun.
