Cut the brisket into bite-sized pieces. Slice the jalapeno pepper open, remove the seeds, and chop it into small pieces.
Preheat a Blackstone griddle to low heat. Lightly coat the griddle top with oil using a paper towel. Warm the brisket on the griddle for a few minutes.
Place 3 tortillas on the griddle. Sprinkle each with queso quesadilla cheese, sharp cheddar cheese, warmed brisket, and jalapeno pieces.
Whisk the eggs, then scramble them gently on the griddle. Season with brisket rub or salt and pepper. Once cooked, divide the eggs evenly among the quesadillas.
Drizzle your favorite BBQ sauce on top of each quesadilla, then add more queso quesadilla and sharp cheddar cheese. Place a second tortilla on top of each quesadilla. Gently press down to help the cheese melt and hold everything together. Flip each quesadilla when the bottom is lightly browned.
Remove the quesadillas from the griddle once the tortillas are lightly browned and the cheese is melted. Cut them into pieces and enjoy!
