A homemade take on the breakfast classic with maple griddle cakes, seasoned sausage, melted American cheese, and eggs stacked into a sweet and savoury breakfast sandwich.

Ingredients
- 500 g breakfast sausage meat
- 4 large eggs
- 4 slices American cheese
- Butter or oil, for cooking
- 200 g plain flour
- 2 tsp baking powder
- 1 tbsp sugar
- Pinch of salt
- 1 large egg
- 240 ml milk
- 30 g butter, melted
- 60 ml maple syrup
Directions
- Preheat your Blackstone griddle to medium heat.
- In a bowl, combine the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and maple syrup.
- Pour the wet ingredients into the dry ingredients and mix until combined and smooth.
- Pour the batter onto the griddle to make 8 small griddle cakes, approximately 10 cm or 4 inches wide.
- Cook until bubbles begin to form on the surface, then flip and continue cooking until golden. Remove from the griddle and keep warm.
- Divide the sausage meat into 4 equal portions and form into thin patties slightly larger than the griddle cakes.
- Cook the sausage patties for 3–4 minutes per side, or until fully cooked.
- Cook the eggs in egg rings or fold them omelette-style to create a similar shape to the griddle cakes. Cook until set.
- Top each sausage patty with a slice of American cheese. Allow the cheese to melt, using a dome if needed.
- To assemble, place a sausage patty with melted cheese onto one maple griddle cake. Top with an egg and a second griddle cake.
- Gently press the sandwiches together and serve immediately.
