Toddeloni with Aidell's Cajun Andouille Sausage

Directions

1. Slice the onions and bell peppers, mince the garlic, and slice the sausage into bite-sized pieces.
2. Preheat the griddle to medium heat.
3. Lightly oil one-third of the griddle and add the minced garlic, onions, bell peppers, and grape tomatoes.
4. Sprinkle the vegetables with Bayou Blend seasoning and sauté for about 3 minutes, until they begin to soften.
5. Oil the next third of the griddle and add the sliced sausage. Cook until browned.
6. Oil the final third of the griddle and add the tortellini. Cook for 1 to 2 minutes.
7. Combine all the ingredients together on the griddle and mix well.
8. Add freshly grated Parmesan cheese and a splash of heavy cream, stirring until everything is evenly coated and heated through.
9. Check that the tortellini is fully cooked and tender.
10. Plate, eat, and enjoy!
