Use a vegetable peeler to thinly slice tofu and place it in a bowl. Season with oregano and smoked paprika. Preheat the Blackstone griddle to medium-high heat. Add 2 Tbsp of oil and sauté the tofu until the edges turn crispy. Warm the pita bread on the griddle. Squirt a little water around them and cover with a dome to steam for 1–2 minutes until soft. To build the gyros, spread tzatziki sauce on warm pita, then add tofu, lettuce, tomato, and onion. Serve immediately and enjoy!
