Ingredients
- 1 burrito-sized tortilla
- 3-4 large eggs
- 1 cup cottage cheese
- ¼ cup cooked and chopped bacon
- 1 cup spinach
- 6 cherry tomatoes, halved
- ¼ red onion, sliced or chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper
Directions
Preheat your Blackstone Airfryer Pizza Oven to 350°F.
Place the tortilla in a round baking pan, ensuring the edges are up to hold the liquid.
Crack the eggs into the tortilla, add the cottage cheese, and season with salt and pepper. Whisk gently to combine.
Layer the bacon, spinach, cherry tomatoes, and red onion over the egg mixture. Add any additional toppings or variations you prefer.
Top with shredded cheese.
Bake at 350°F for 12 minutes.
Remove from the oven and let cool for 5 minutes before slicing.
Serve with your favorite hot sauce (optional) and enjoy!
