Ultimate Breakfast Burrito

Serves 3

Time: 30 minutes

Ingredients

  • 6 pieces of bacon, chopped into small pieces
  • 3 potatoes, diced into small pieces
  • Salt and pepper to taste
  • 6 eggs
  • Extra virgin olive oil or other cooking oil, for the griddle
  • 3 flour tortillas
  • 1 1/2 cups of any combination of queso quesadilla, cheddar, and Monterey jack cheeses, shredded
  • Cilantro (optional)
  • Green Chile Verde taco sauce or Cholula Chili Garlic hot sauce

Directions

  1. Turn on Blackstone Griddle to medium-high heat. Drizzle cooking oil and spread with a paper towel. 
  2. Put bacon down on the griddle top.
  3. When bacon is about halfway cooked, add potatoes, sprinkle with salt and pepper, and continue tossing while cooking. Move them to one side of the griddle.
  4. Crack eggs into a bowl and stir. Pour the eggs on the other side of the griddle and scramble or fold eggs over while heating.
  5. Combine eggs, bacon, and potatoes and remove from the griddle. 
  6. Drizzle and spread more oil on the griddle. Place tortillas on the griddle, flipping when they start to bubble. Be careful not to let them burn.
  7. Remove tortillas from the griddle. Fill them with potatoes, bacon, eggs, cheese, and cilantro. Drizzle with the sauce inside. 
  8. Fold up the burritos.
  9. Enjoy!
