Ultimate Breakfast Burrito

Ingredients
- 6 pieces of bacon, chopped into small pieces
- 3 potatoes, diced into small pieces
- Salt and pepper to taste
- 6 eggs
- Extra virgin olive oil or other cooking oil, for the griddle
- 3 flour tortillas
- 1 1/2 cups of any combination of queso quesadilla, cheddar, and Monterey jack cheeses, shredded
- Cilantro (optional)
- Green Chile Verde taco sauce or Cholula Chili Garlic hot sauce
Directions
- Turn on Blackstone Griddle to medium-high heat. Drizzle cooking oil and spread with a paper towel.
- Put bacon down on the griddle top.
- When bacon is about halfway cooked, add potatoes, sprinkle with salt and pepper, and continue tossing while cooking. Move them to one side of the griddle.
- Crack eggs into a bowl and stir. Pour the eggs on the other side of the griddle and scramble or fold eggs over while heating.
- Combine eggs, bacon, and potatoes and remove from the griddle.
- Drizzle and spread more oil on the griddle. Place tortillas on the griddle, flipping when they start to bubble. Be careful not to let them burn.
- Remove tortillas from the griddle. Fill them with potatoes, bacon, eggs, cheese, and cilantro. Drizzle with the sauce inside.
- Fold up the burritos.
