Ingredients
- Large flour tortillas
- 6-8 boneless, skinless chicken thighs
- 2 cups shredded Mexican cheese blend

- 2-3 pinches kosher salt
- 2-3 pinches coarse black pepper
- 1/4 cup Herdez street sauce Verde
- 2-3 limes
- 2-3 tbsp olive oil
- Handful of cilantro, chopped
- Pickled sliced jalapeños
- Red chile, sliced (optional)
- 2-3 tbsp sour cream
- Splash of orange juice
Directions
Preheat your Blackstone griddle to medium heat.
In a large ziplock bag, combine the chicken thighs, olive oil, kosher salt, black pepper, Blackstone Tequila Lime Seasoning, Blackstone Taco Fajita Seasoning, Herdez street sauce Verde, and lime juice. Marinate for at least an hour or overnight.
Add a little olive oil to the griddle and cook the chicken thighs for a few minutes on each side until they have crispy edges but are not burnt. Add a little leftover marinade to the chicken after the first flip to keep it juicy.
To make the special sauce, mix the sour cream, Herdez street sauce, orange juice, Blackstone Tequila Lime Seasoning, kosher salt, and black pepper in a bowl.
Dice the chicken and mix with lime juice, tequila lime seasoning, and a little more Herdez street sauce.
To build the quesadillas, place a large flour tortilla on the griddle and sprinkle shredded cheese over the entire tortilla. Add the diced chicken, chopped cilantro, pickled jalapeños, and sliced red chile on one half of the tortilla. Fold the other half over and cook both sides until the cheese is fully melted.
Slice the quesadillas into triangular thirds, drizzle with the special sauce, and sprinkle with Blackstone Tequila Lime Seasoning and chopped cilantro. Serve and enjoy!
