Ingredients
- 3-4 zucchini, thinly sliced lengthwise
- 1 jar of marinara sauce
- 15 oz ricotta cheese
- Zest and juice from 1 lemon
- 2 tsp chopped garlic
- 1/4 cup shredded parmigiano reggiano cheese
- Olive oil
- Salt and pepper to taste
- 1/2 cup olive oil
- 3 tbsp red wine vinegar
- Juice from 1/2 lemon
- Salt and pepper to taste
- Mixed greens
- Optional: 1 tsp Dijon mustard

Directions
Preheat your Blackstone Pizza Oven to 450°F
Arrange the zucchini slices on a baking pan. Drizzle them with olive oil and season with salt and pepper. Place them in the oven and bake for 10 minutes.
In a medium-sized bowl, combine the ricotta cheese, lemon zest, lemon juice, chopped garlic, shredded cheese, and salt and pepper to taste.
Cover the bottom of a baking dish with marinara sauce. Once the zucchini slices have slightly cooled, place 1 teaspoon of the ricotta mixture on one end of a zucchini slice and roll it up. Arrange the zucchini rolls in the baking dish. Season with salt and pepper and drizzle with olive oil. Bake in the oven for 10-12 minutes. Once finished, sprinkle the top with grated parmigiano reggiano cheese.
For the side salad, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper in a small bowl. If desired, add the optional Dijon mustard. Drizzle the desired amount of dressing over the mixed greens and enjoy!
