Griddled Pineapple and Ice Cream
Serves 4 Time: 15 minutes Difficulty: Easy
Ingredients
- 1 (20-ounce) can pineapple slices, drained or 1 fresh pineapple, sliced and cored
- ½ cup brown sugar
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 3 tablespoons dark rum or 1 ½ teaspoons rum extract
- ¼ cup unsalted butter
- Vanilla ice cream, for serving
Directions
- Preheat Blackstone griddle to low heat.
- In a large bowl combine brown sugar, lemon juice, rum, and honey in a bowl until smooth. Add pineapple rings to the bowl and spread mixture on both sides of each pineapple ring.
- Melt the butter on the griddle.
- Place pineapple rings on the griddle for 3-5 minutes, turning once until sugar mixture melts and pineapple is heated and tender.
- Pour the remaining sugar mixture over pineapple rings, let it reduce. Keep the heat low and the sauce moving with spatulas to avoiding burning the sugar.
- Turn the griddle off and remove pineapple slices from the heat. Serve with scoop of ice cream and drizzle the sauce over the top.
