Ham Fried Rice

Ingredients
- 4 cups rice, cooked
- 1 pound ham, diced
- 1 onion, diced
- 6 cloves garlic, minced
- 1 tablespoon fresh ginger, minced or 1 teaspoon ground ginger
- ¼ teaspoon fresh cracked black pepper
- 1 (12-ounce) bag frozen peas and carrots
- 1 tablespoon unsalted butter
- 3 eggs, beaten
- 4 green onions, sliced
- 3 tablespoons soy sauce
- 1 lemon, juiced
- Vegetable oil, for the griddle
Directions
- Preheat Blackstone griddle to medium-high heat, add oil to griddle and spread into a thin layer.
- Add onions and cook for 5 minutes or until soft and translucent. Add garlic, ginger, and black pepper. Cook until fragrant, about 2 minutes.
- On a clear space on the griddle, add a drizzle of oil, peas, carrots, and ham. Add the cooked rice on top of the onion, garlic, and ginger mix. Toss to combine.
- When the peas, carrots, and diced ham are heated through, combine with the rice. Mix everything thoroughly.
- Melt the butter on the griddle and add the eggs. Scramble until fully cooked, then incorporate into the rice mixture.
- Add soy sauce, green onions, and lemon juice to the rice. Toss to combine. Add more soy sauce to taste.
- Remove from griddle and serve hot.
