Ham Fried Rice

Serves 4 Time: 20 minutes Difficulty: Easy

Ingredients

  • 4 cups rice, cooked
  • 1 pound ham, diced
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or 1 teaspoon ground ginger
  • ¼ teaspoon fresh cracked black pepper
  • 1 (12-ounce) bag frozen peas and carrots
  • 1 tablespoon unsalted butter
  • 3 eggs, beaten
  • 4 green onions, sliced
  • 3 tablespoons soy sauce
  • 1 lemon, juiced
  • Vegetable oil, for the griddle

Directions

  1. Preheat Blackstone griddle to medium-high heat, add oil to griddle and spread into a thin layer.
  2. Add onions and cook for 5 minutes or until soft and translucent. Add garlic, ginger, and black pepper. Cook until fragrant, about 2 minutes.
  3. On a clear space on the griddle, add a drizzle of oil, peas, carrots, and ham. Add the cooked rice on top of the onion, garlic, and ginger mix. Toss to combine.
  4. When the peas, carrots, and diced ham are heated through, combine with the rice. Mix everything thoroughly.
  5. Melt the butter on the griddle and add the eggs. Scramble until fully cooked, then incorporate into the rice mixture.
  6. Add soy sauce, green onions, and lemon juice to the rice. Toss to combine. Add more soy sauce to taste.
  7. Remove from griddle and serve hot.Steps Image
