AirFryer Blackberry Scones

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter frozen
  • 1/2 cup plain Greek yogurt
  • 1 egg large
  • 1 Tbs vanilla extract
  • 1 cup blackberries washed and patted dry

Lemon Vanilla Glaze

  • 1 1/4 cup powdered sugar
  • 2 Tbs melted butter
  • 1/2 tsp vanilla
  • 1 tbs milk
  • 1 tbs fresh lemon juice


    1. Shred the frozen butter using a cheese grater into a bowl. Add the flour, sugar, baking soda, baking powder, salt, and mix with hands attempting to keep the butter cold. 
    2. Add yogurt, egg, and vanilla to the mixture; mix together with hands. Add Blackberries, and  gently mix together until berries are coated.
    3.  Place a piece of parchment paper on the counter. Pour dough onto parchment and form into a circle pressing until 1” high then cut into 8 triangles.
    4. Preheat Air Fryer to medium; spray cooking spray on the tray. Place scones in each air fryer tray.
    5. Cook 7-8 minutes, or until a nice golden brown. Remove and let cool while making the glaze.
    6. In a bowl, mix powdered sugar, vanilla, lemon juice, and milk. drizzle over scones, and enjoy!
