AirFryer Blackberry Scones

Ingredients
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter frozen
- 1/2 cup plain Greek yogurt
- 1 egg large
- 1 Tbs vanilla extract
- 1 cup blackberries washed and patted dry
Lemon Vanilla Glaze
- 1 1/4 cup powdered sugar
- 2 Tbs melted butter
- 1/2 tsp vanilla
- 1 tbs milk
- 1 tbs fresh lemon juice
Directions:
- Shred the frozen butter using a cheese grater into a bowl. Add the flour, sugar, baking soda, baking powder, salt, and mix with hands attempting to keep the butter cold.
- Add yogurt, egg, and vanilla to the mixture; mix together with hands. Add Blackberries, and gently mix together until berries are coated.
- Place a piece of parchment paper on the counter. Pour dough onto parchment and form into a circle pressing until 1” high then cut into 8 triangles.
- Preheat Air Fryer to medium; spray cooking spray on the tray. Place scones in each air fryer tray.
- Cook 7-8 minutes, or until a nice golden brown. Remove and let cool while making the glaze.
- In a bowl, mix powdered sugar, vanilla, lemon juice, and milk. drizzle over scones, and enjoy!
