Ingredients
- 2 thick beef burger patties

4 slices streaky bacon

2 burger buns

2 thick pineapple rings

½ onion, thinly sliced

1 tbsp cooking oil

1 tbsp butter
-
2 tbsp light brown sugar
-
2 tbsp soy sauce
-
2 tbsp pineapple juice, reserved from the canned pineapple

1 tbsp tequila, optional
-
1 tsp cornflour
-
2 tbsp water
-
4 slices cheese
Directions
- Preheat your Blackstone griddle to medium-high heat.
Add the sliced onion to a small griddle-safe pan and cook until softened.
Stir the pineapple juice, brown sugar, and soy sauce into the onions.
In a small bowl, mix the cornflour and water until smooth. Stir the slurry into the pineapple-onion mixture and simmer until the sauce thickens into a glossy glaze.
Cook the bacon on the griddle until browned and crisp. Remove and set aside.
Lightly oil the griddle and add the burger patties. Cook for 4–5 minutes on the first side, or until a deep crust develops.
While the burgers cook, melt the butter on another section of the griddle. Add the pineapple rings and sprinkle with a little of the brown sugar. Cook until caramelized on both sides.
If using tequila, carefully add it to the pineapple and allow it to cook down.
Flip the burger patties and top each with two slices of cheese. Cover with a melting dome or cloche and cook until the cheese is melted and the burgers reach your preferred doneness.
Toast the burger buns on the griddle until lightly golden.
Place a cheeseburger patty on each bottom bun. Top with the crispy bacon, caramelized pineapple, and a generous spoonful of the pineapple-onion glaze.
Add the top buns and serve immediately.
