Bacon Cheeseburger Bandito Sliders

Ingredients
- 1 lb 80/20 ground beef
- 1 cup shredded Colby Jack cheese
- Kings Hawaiian rolls
- Jarred diced jalapeños
- 1 medium yellow onion, diced
- Thick-cut bacon
- BBQ sauce (homemade or store-bought)
- Chili cheese Fritos

Directions
Preheat your Blackstone griddle to medium heat on one side. Once heated, place thick-cut bacon (5-6 slices or more) on the griddle and cook to your preferred crispiness. Remove when done and drain excess fat on paper towels. Keep the bacon fat on the griddle; don’t discard it.
On the griddle, spread out a bit of the bacon fat and add the 80/20 ground beef. Chop it up and let it cook, seasoning with Blackstone Bootleg Burger seasoning. Next to the beef, add diced yellow onion and season with kosher salt and black pepper. Stir occasionally until the onions caramelize, then mix the beef and onions together and continue cooking.
Chop up the cooked bacon and add it back to the beef along with shredded cheese and pickled jalapeños. Mix well until the cheese melts.
While the cheese is melting, slice the Hawaiian rolls in half horizontally without separating them. Place them on the griddle, cut side down, to toast the inside. Once toasted, flip them over to toast the outside.
Time to assemble! Spread BBQ sauce on both the top and bottom bun halves. Add the beef mixture on top of the bottom bun, then top it with a generous amount of chili cheese Fritos. Place the top bun on the Fritos.
To serve, cut the sliders apart and arrange them on a large platter. Optionally, sprinkle with a bit of Blackstone Bootleg Burger seasoning for extra flavor. Enjoy!
