Buffalo Chicken Fritters
Serves 2-3 Difficulty: Easy Time: 25 minutes
Ingredients
- 1 pound boneless skinless chicken breast, diced small
- 1/3 cup shredded mozzarella cheese
- ¼ cup blue cheese crumbles
- 2 tablespoons mayonnaise
- 3 tablespoons buffalo sauce (and extra for serving)
- 1/3 cup all-purpose flour
- 1 egg
- Salt and pepper, to taste
- Ranch, to serve
Directions
- Add all the ingredients except olive oil and ranch to a large mixing bowl. Mix to evenly combine. Be sure there aren’t any lumps of flour.
- Heat your Blackstone Griddle to medium-low and add 2 tablespoons of the chicken mix. Press the chicken down until it becomes a flat, disc-like shape. Repeat with the remaining chicken mixture.
- Cook for 3-4 minutes per side or until the chicken is fully cooked. Serve with more buffalo sauce and ranch.
