Buffalo Chicken Fritters

Serves 2-3 Difficulty: Easy Time: 25 minutes


  • 1 pound boneless skinless chicken breast, diced small
  • 1/3 cup shredded mozzarella cheese
  • ¼ cup blue cheese crumbles
  • 2 tablespoons mayonnaise
  • 3 tablespoons buffalo sauce (and extra for serving)
  • 1/3 cup all-purpose flour
  • 1 egg
  • Salt and pepper, to taste
  • Ranch, to serve


  1. Add all the ingredients except olive oil and ranch to a large mixing bowl. Mix to evenly combine. Be sure there aren’t any lumps of flour.
  2. Heat your Blackstone Griddle to medium-low and add 2 tablespoons of the chicken mix. Press the chicken down until it becomes a flat, disc-like shape. Repeat with the remaining chicken mixture.
  3. Cook for 3-4 minutes per side or until the chicken is fully cooked. Serve with more buffalo sauce and ranch.
