Ingredients
For the Chicken Wings:
2 lbs. chicken wings, split at joints, tips discarded
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and black pepper to taste
Wood pellets (hickory or mesquite for a bold smoky flavor)
For the Homemade Buffalo Sauce:
1/2 cup unsalted butter
1/2 cup hot sauce (Frank's RedHot or your preferred brand)
1 tablespoon white vinegar
1/2 teaspoon Worcestershire sauce
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper (adjust to taste)/li>

For the Blue Cheese Dipping Sauce:
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup crumbled blue cheese
1 tablespoon lemon juice

Instructions
Preheat the Pellet Smoker:
Preheat your pellet smoker to 225°F (107°C)using wood pellets like hickory or mesquite for a bold smoky flavor.
Prep the Chicken Wings:
In a large bowl, toss the chicken wings with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
Smoke the Chicken Wings:
Place the seasoned chicken wings directly on the preheated smoker grates. Smoke at 225°F for approximately 2 to 2.5 hours or until the wings reach an internal temperature of 165°F (74°C).
Prepare the Homemade Buffalo Sauce:
In a saucepan over medium heat, melt the butter. Stir in the hot sauce, white vinegar, Worcestershire sauce, garlic powder, cayenne pepper, and salt. Simmer for 5-7 minutes, stirring occasionally. Adjust the heat level to your preference.
