Ingredients

For the Homemade Buffalo Sauce:

  • 1/2 cup unsalted butter
  • 1/2 cup hot sauce (Frank's RedHot or your preferred brand)
  • 1 tablespoon white vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)/li>

For the Blue Cheese Dipping Sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Instructions

  1. Preheat the Pellet Smoker:
    • Preheat your pellet smoker to 225°F (107°C)using wood pellets like hickory or mesquite for a bold smoky flavor.
  2. Prep the Chicken Wings:
    • In a large bowl, toss the chicken wings with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Smoke the Chicken Wings:
    • Place the seasoned chicken wings directly on the preheated smoker grates. Smoke at 225°F for approximately 2 to 2.5 hours or until the wings reach an internal temperature of 165°F (74°C).
  4. Prepare the Homemade Buffalo Sauce:
    • In a saucepan over medium heat, melt the butter. Stir in the hot sauce, white vinegar, Worcestershire sauce, garlic powder, cayenne pepper, and salt. Simmer for 5-7 minutes, stirring occasionally. Adjust the heat level to your preference.

    • Once the chicken wings are smoked and cooked through, transfer them to a large mixing bowl. Pour the homemade buffalo sauce over the wings and toss until well-coated.
