Betty’s Burger Sauce
- 1 c Dukes Mayonnaise
- ½ c Ketchup
- ½ c Mustard
- ⅓ c Pickle Juice
- 2 tbsp Worcestershire Sauce
- 2-4 fresh Garlic cloves, grated
- ½ c White Onion grated
- 2 tsp Paprika
- 1 tsp Salt, or to taste
- 1 tsp Pepper, or to taste
Directions
-
Soft flour into a large mixing bowl, set aside.
-
Mix egg, salt and water in a small bowl then add to the sifted flour. Begin to mix with a rubber spatula to incorporate ingredients. See video.
-
Lightly dust a clean counter or work surface with cornstarch. Add the egg roll mixture and knead for 10-15 minutes. Place dough in a bowl and cover with a damp towel and set aside on the kitchen counter for 40 minutes.
-
Preheat Blackstone to medium to medium high heat and melt butter with olive oil then add chopped onions. Cook 3 minutes mixing onions to coat in the butter and oil, seasoning them with your favorite Blackstone seasoning.
-
Add the beef to the onions, if using patties or balls smash with the Blackstone burger press. Seasoning to taste with Blackstone seasoning. Flip meat, add desired amount of cheese. Then using a scraper or spatula break apart the meat and incorporate onions. Remove from heat and let it cool.
-
Once your 40 minute time is up and the meat is cooled, cut a piece of egg roll dough off about the size of a golf ball and roll dough thin working on a cornstarch dusted surface. Dough can be rolled out to desired size from mini to giant.
-
See video for rolling egg rolls. Place meat and extra cheese if desired, roll, sealing edges with a mixture of water and cornstarch. Repeat until all meat is used.
-
Preheat Blackstone to medium low to low heat and drizzle just enough oil to place each egg roll in. Allow eggrolls to cook low and slow turning to crisp to a golden brown color on each side using tongs. Egg Rolls can be cooked in the Blackstone airfryer as well. Lightly spray each side with oil and cook on medium until golden brown, or about 5 minutes.
-
Serve eggrolls with burger sauce and enjoy!
Notes: burger sauce can be kept in the refrigerator for 3 weeks. Add chopped pickles if desired. Try with fries, veggies, crab cakes & more!
