Cheesy Bacon Flatbread

Directions

1. Preheat your Blackstone to medium-high heat and lightly coat the griddle with the cooking oil.

2. Cook the streaky bacon, turning occasionally, until the fat has rendered and the bacon is browned. For the best texture, leave the bacon slightly chewy rather than fully crisp.

3. Move the bacon to a cooler area of the griddle and lightly sprinkle the flatbreads with water before placing them onto the griddle to soften.

4. Divide the bacon evenly between the flatbreads and top each with 4 slices of American cheese.

5. Fold the flatbreads over the filling and cook for 1–2 minutes per side until lightly toasted.

6. Add a small splash of water to the griddle and cover with a melting dome or cloche for 30–60 seconds to steam the flatbreads and fully melt the cheese.

7. Remove from the griddle and serve immediately while hot and gooey. Add a drizzle of your favorite hot sauce, if desired.
