Ingredients
- 500 g ground chicken

2 Greek-style flatbreads or pitas

1 tbsp olive oil or chili oil

2 tsp Greek seasoning (or a blend of paprika, oregano, garlic powder, onion powder, fenugreek, salt, pepper, and a pinch of cinnamon)
- 100 g diced cucumber

100 g diced tomatoes
-
50 g finely diced red onion
-
1 tbsp lemon juice
-
1 tbsp chili oil (or olive oil)
-
2 tbsp Greek seasoning
- 80 g crumbled feta cheese
-
Whipped feta, for spreading

Tzatziki, for serving
Directions
- Preheat your Blackstone to medium-high heat.
In a bowl, combine the ground chicken with the Greek seasoning until evenly mixed.
Divide the chicken mixture between the flatbreads and spread it into a thin, even layer, making sure the chicken reaches all the way to the edges.
In a separate bowl, combine the cucumber, tomatoes, red onion, lemon juice, chili oil, and Greek seasoning. Toss well and set aside for a few minutes to allow the flavors to come together.
Lightly oil the griddle and place the flatbreads chicken-side down. Cook for 4–5 minutes until the chicken develops a deep golden crust.
Flip the flatbreads so the chicken is facing up. Sprinkle with a little extra Greek seasoning and drizzle with chili oil, if desired.
Flip the flatbreads back over, chicken-side down, and cook for another 3–4 minutes until the chicken is fully cooked. Add a small splash of water to the griddle and cover with a melting dome or cloche for 1–2 minutes to keep the flatbreads soft.
Remove the flatbreads from the griddle and spread each with whipped feta.
Top with the Greek salad, crumbled feta, and a generous drizzle of tzatziki.
Slice and serve immediately.
