Ingredients

1 lb. chicken tenders
-
½ sweet onion, chopped
-
¼ lb deli sliced American cheese (Cooper sharp American or Boar's Head)

2 12-inch Italian hoagie rolls

3 tbsp vegetable oil or neutral oil

Salt & pepper, to taste
Directions
Remove tendons from the chicken tenders and chop the onions.
Preheat the griddle to medium-high heat. Add the oil to the griddle and fry the onions until the edges are crisp and the centers are translucent. Season with salt and pepper, then remove the onions from the griddle, leaving the onion-flavored oil behind.
Place the chicken tenders in the remaining oil, tossing to coat. Use a scraper and spatula to finely chop the tenders as they cook, about 3-4 minutes. Season with salt and pepper.
Add the cheese on top of the chicken, breaking it apart with spatulas to allow it to melt evenly throughout the chicken. Arrange the chicken into two piles.
Place a hoagie roll over each pile of chicken and cheese. Lightly drizzle water around the outside of the rolls to create steam. Slide a spatula under the meat while holding the roll with your other hand, flipping the sandwich off the griddle.
Serve the sandwiches immediately. You can add any additional ingredients you prefer and serve with pickled hot or sweet peppers.
