Char Siu (Chinese BBQ Pork)

Ingredients
- 2 lbs pork shoulder, sliced into 2-inch chunks or bite-sized pieces
- 2 1/2 tablespoons brown sugar
- 2 tablespoons hoisin sauce
- 1 1/2 tablespoons dark soy sauce
- 1 tablespoon soy sauce
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon baking soda
- Optional: 3-4 drops red food coloring
- Rice, as needed
- Cucumbers, as needed
Directions
- Slice the pork shoulder into 2-inch chunks or bite-sized pieces.
- In a bowl, combine the brown sugar, hoisin sauce, dark soy sauce, soy sauce, kosher salt, black pepper, baking soda, and red food coloring (optional). Add the pork and mix until evenly coated. Let it marinate for 30 minutes.
- Heat a Blackstone griddle and lightly oil it. Cook the marinated pork on the hot griddle, covering it with a basting lid. Occasionally uncover the lid and add a splash of water over the pork to prevent burning and ensure even cooking. Cook on medium-low heat for about 8-10 minutes or until the pork is cooked through. Flip and stir the pork occasionally.
- Remove the basting lid and char the pork for an additional minute on each side to achieve crispy edges.
- Serve the Char Siu over a bed of rice with sliced cucumbers or enjoy it between a French baguette with pickled carrots and daikon.
