1 small white onion, diced
1 block easy-melt cheese
1 can Rotel
1–2 bags steak fries
1–2 teaspoons oil
Prepared guacamole, for topping
Crema, for topping
Fresh cilantro, chopped, for garnish
Once preheated, add the oil to the pan, followed by the soy chorizo and diced onion. Cook until the chorizo is cooked through and the onion is translucent.
Add the easy-melt cheese and Rotel to the pan and stir to combine. Cook on the pellet grill for about 20 minutes, stirring every 5 minutes, until the cheese is completely melted and the queso is smooth.
While the queso cooks, prepare the steak fries in the air fryer according to the package directions.
Arrange the cooked fries on a serving platter and generously spoon the chorizo queso over the top. Finish with guacamole, a drizzle of crema, and chopped cilantro. Serve immediately.
