CJ's Red and Green Huevos Rancheros Recipe

Ingredients:

  • Corn tortillas
  • Cilantro
  • Vegetable oil or Olive oil
  • 1 Can of Refried beans
  • 1/4 cup of beer
  • 6 Eggs
  • 2 cups of Shredded cheddar cheese
  • Queso Fresco
  • Red Enchilada Sauce
  • Green Enchilada Sauce or Salsa Verde
  • Coarse Black Pepper
  • Kosher Salt
  • Blackstone Hatch Chile and Cheddar seasoning

Directions:

  1. Preheat one zone of your Blackstone to medium high and another on medium. On the medium zone place a small sauce pan with one can of refried beans and 1/4 cup of beer. Let that heat up and stir occasionally. Add more beer to thin it out as necessary. On the Medium high zone add enough oil to do a shallow fry on the griddle and place down 6 corn tortillas to cook. This won’t take long so stick around to flip occasionally till they’re golden and crispy. The crisper the better. When they’re done remove from the Blackstone and drain on paper towels.
  2. While your tortillas are cooking you can shred your cheddar cheese and set aside.
  3. Now that your tortillas are done crack 6 eggs in the medium high zone. You can bring the heart down to medium low. Season the eggs with Kosher salt and coarse black pepper. Cook the eggs how your prefer. If sunny side up this won’t take more that 3 minutes.
  4. Now it’s time to build. On a plate or cutting board start with your crispy tortillas and smoother with refried beans followed by some shredded cheese, top with one fried egg and drizzle with red enchilada sauce and your green enchilada sauce. Garnish with quasi fresco and fresh cilantro. Repeat these step for your additional plates and enjoy!
