A thick, juicy beef burger topped with crispy streaky bacon, melted vintage cheddar, buttery red onions, and punchy English mustard. Inspired by a traditional British pub burger, this simple combination is all about bold, classic flavors.

4 slices streaky bacon
2 thick slices vintage cheddar cheese
1 small red onion, thickly sliced
2 burger buns
2 tbsp butter
English mustard, to taste
Cooking oil, for the griddle
Place the bacon on the griddle and cook until browned and crisp. Move it to a cooler area of the griddle to keep warm.
Lightly oil the griddle, then add the burger patties. Cook for 4–5 minutes on the first side, or until a deep, golden-brown crust develops.
Flip the burgers and continue cooking on the second side.
Melt the butter on another section of the griddle. Add the sliced red onion and cook until softened and lightly caramelized, while still retaining a little bite.
Top each burger with a thick slice of vintage cheddar. Cover with a melting dome or cloche and cook until the cheese is melted and the burgers reach your preferred doneness.
Place the burger buns cut-side down on the griddle and toast until lightly golden.
Spread a generous amount of English mustard over the bottom half of each toasted bun.
Place a cheeseburger patty on each bottom bun, then top with the buttery red onions and crispy bacon.
Add the top buns and serve immediately.
