Preheat Blackstone griddle to medium-high heat. Add bacon and sausage, sauté until the sausage is fully cooked and the bacon is very crispy.
Pour the beaten eggs over the bacon and sausage. Stir with spatulas until the eggs are fully cooked.
Drizzle vegetable oil onto the griddle then toast the pitas on both sides. Once toasted, evenly spread the country gravy over the top of the pitas.
Evenly divide the bacon, sausage and eggs over the top of the pitas. Top with shredded cheese and cover with the griddle hood or a basting dome for 2 minutes or until the cheese is fully melted.
Remove the pitas from the griddle and slice into quarters. Serve immediately.
