Preheat Blackstone griddle to medium heat. Drizzle with vegetable oil then add the cubed chicken. Season with salt and pepper. On another side of the griddle, throw down the mixed vegetables, bell pepper, and onion.
Cook the chicken for 7-9 minutes or until completely cooked. Stir the vegetables and cook until lightly seared and tender. Add the rice and flatten it out onto the griddle.
Once the rice is crispy and fully heated, use your spatulas to mix the vegetables, chicken, and rice. Sprinkle the green onions, cilantro, and curry powder over the mix. Stir with spatulas and cook for an additional minute.
Remove the rice from the griddle and serve immediately.
