Ingredients

  • 1 pound raw, deveined and peeled shrimp
  • 6-8 small hoagie rolls
  • 2 stalks celery, diced
  • 1 bunch green onions, diced
  • 1/2 cucumber, diced
  • 1 jalapeno, minced
  • 1 lemon, juiced
  • 1/3 cup mayonnaise
  • 1/2 teaspoon paprika (optional)
  • Salt and pepper, to taste
  • Vegetable oil for the griddle

Directions

  1. Preheat a Blackstone griddle to medium heat. Drizzle vegetable oil over the griddle, then add the shrimp. Season with salt and pepper to taste and cook for 5 minutes, or until the shrimp are opaque and fully cooked.
  2. Place the cooked shrimp on a plate and refrigerate for 1 hour.
  3. In a medium mixing bowl, combine the chilled shrimp, celery, green onions, cucumber, jalapeno, lemon juice, zest, mayonnaise, and paprika (if using). Mix until fully incorporated, and season with salt and pepper if needed.
  4. Preheat the Blackstone griddle to medium-low heat. Toast the hoagie rolls for 2 minutes on each side.
  5. Remove the rolls from the griddle and fill them with the shrimp salad. Serve immediately.
