Set the timer for 10 minutes. At the same time, start cooking the foot-long franks on the griddle. Add the peppers and onions to the griddle and cook them alongside the franks. After 5 minutes, pause the air fryer and shake the fries in the basket for even cooking. Continue cooking the fries for the remaining 5 minutes. Remove the franks and the sautéed peppers and onions from the griddle once fully cooked. Place each frank in a foot-long bun and top with the cooked peppers and onions. Add spicy brown mustard to taste. Remove the fries from the air fryer once the 10-minute cooking time is complete. Sprinkle crumbled feta cheese over the hot fries.
