In a small bowl, mix mayonnaise with fresh lime juice and Tequila Lime Seasoning to taste. Set aside.
Rinse the fish fillets and pat dry with paper towels. Season both sides evenly with Blackened Steak Seasoning.
Lightly drizzle oil over the fillets, then place them on the griddle. Cook until browned, then flip and cook the other side until fully done. Remove from the griddle and cut into bite-sized pieces.
Place tortillas on the griddle and warm until lightly charred on both sides. Remove from heat.
Assemble the tacos by adding fish to each tortilla. Top with coleslaw mix, diced onions, cilantro, Cotija cheese, and hot sauce.
Drizzle with the prepared lime mayo sauce and serve immediately.
