Ingredients
- package of Impossible™ meat, divided into 4 equal-sized balls
- 4 slices of Texas toast
- 4 slices of pepper jack cheese

BBQ Sauce (such as Cackalacky® Sweet Sauce)
- BBQ seasoning (such as Fire & Smoke Society Mayor of Rub Town)
- 1 bag of Chili Cheese Fritos
- 1 stick of softened butter
- 1 white onion, thinly sliced
- 1 cup of flour
- Seltzer water

- Oil for frying
Directions
Heat one side of the griddle to medium-high heat. Place a tin foil pan on the griddle and fill it halfway with oil. Heat the oil to 350˚F. Heat the opposite side of the griddle to medium heat.
Place 1 cup of Fritos in a blender and blend until crumbled. Add the crumbled Fritos to the softened butter and mix to create compound butter.
In a bowl, combine flour and seltzer water, whisking together to create a batter. Season the batter with Essential Blend seasoning and fold in the onion slices to coat them. Fry the coated onions until crispy, then set them aside on a paper towel to drain.
Place the Impossible™ meat balls on the griddle. Use parchment paper and a burger smasher to flatten the meat balls into patties on the griddle. Season the patties with BBQ rub. After 1-2 minutes, flip the patties and cover them with pepper jack cheese. Squirt water around the patties and cover them with a basting dome to allow the steam to melt the cheese.
Spread the compound butter on one side of each slice of Texas toast and toast them on the griddle.
Build the toaster by layering the ingredients as follows: bread, 2 patties, crispy onions, Fritos, extra BBQ sauce, and bread.
