Ingredients
- 2½–3 lbs chicken wings, separated into flats and drums
- 2 tsp Blackstone Essentials Blend, or to taste
- 1 tsp smoked paprika
- 2 tsp Blackstone Dill Pickle Chicken Seasoning, or to taste
- 2 tbsp cornstarch
- ¼ cup butter
- ½ cup Texas Pete hot sauce, or to taste
- 1 cup mayonnaise
- 1 cup full-fat buttermilk
- 1 packet Hidden Valley Ranch Seasoning, sized for 2 cups of dressing
- Celery sticks, for serving
- Carrot sticks, for serving

Directions
- Preheat your Blackstone griddle to low heat.
- Add the chicken wings to a large bowl and season with Blackstone Essentials Blend, smoked paprika, and Dill Pickle Chicken Seasoning. Add the cornstarch last and toss until the wings are lightly and evenly coated.
- Arrange the wings in a single layer on the griddle. Cook for 4–5 minutes, then flip and cook for another 5 minutes. Turn the wings as needed to brown all sides.
- While the wings cook, combine the mayonnaise, buttermilk, and ranch seasoning. Refrigerate until ready to serve to allow the dressing to thicken.
- Cover the wings with a griddle dome and cook for about 3 minutes. Turn the wings, check their internal temperature, then cover and cook for another 3–5 minutes as needed.
- Continue cooking until the thickest part of the wings reaches 180–185°F (82–85°C), checking the temperature away from the bone. Remove individual wings as they finish cooking.
- Melt the butter and combine it with the hot sauce in a large heatproof bowl.
- Add the cooked wings to the sauce and toss until evenly coated.
- Serve immediately with the homemade ranch, celery sticks, and carrot sticks.
