Griddled Gnocchi in Vodka Sauce
Ingredients:
- 2 12 oz Rana Skillet Gnocchi, refrigerated
- 6 oz pancetta, diced
- 2 garlic cloves, fresh or substitute garlic paste
- fresh spinach
- Extra Virgin olive oil
- Pecorino Romano cheese
- Delallo Vodka Sauce
Directions:
- drizzle a tablespoon of oil on medium heat and add pancetta to cook 1-2 minutes.
- Add garlic to cook 3 seconds, tossing to keep things moving.
- Add skillet gnocchi and gently toss to coat thinly in oil adding more if needed until gnocchi is golden brown.
- Add a few handfuls of spinach to cook, about one minute.
- Add vodka sauce tossing to coat and heat. Grate cheese and mix through.
- Plate, and garnish and serve with more cheese.
