Griddled Gnocchi in Vodka Sauce

Ingredients: 

  • 2 12 oz Rana Skillet Gnocchi, refrigerated
  • 6 oz pancetta, diced 
  • 2 garlic cloves, fresh or substitute garlic paste
  • fresh spinach
  • Extra Virgin olive oil
  • Pecorino Romano cheese
  • Delallo Vodka Sauce

Directions: 

  1.  drizzle a tablespoon of oil on medium heat and add pancetta to cook 1-2 minutes. 
  2. Add garlic to cook 3 seconds, tossing to keep things moving. 
  3. Add skillet gnocchi and gently toss to coat thinly in oil adding more if needed until gnocchi is golden brown. 
  4. Add a few handfuls of spinach to cook, about one minute. 
  5. Add vodka sauce tossing to coat and heat. Grate cheese and mix through. 
  6. Plate, and garnish and serve with more cheese. 
Note: Rana skillet gnocchi is perfect on the griddle. Switch out different meats, vegetables and sauces!
