Grilled Cheese Smash Burgers

Ingredients
- 1 lb 80/20 ground beef
- Thick-cut bacon
- Texas toast
- American cheese slices
- 1-2 tbsp unsalted butter
- Red onion, sliced (for garnish)
- 3 tbsp ketchup
- 1 tbsp yellow mustard
- 2 tbsp Duke's mayo
- 2 tbsp sweet relish
- 1 tsp Blackstone Whiskey Burger Seasoning
- Romaine lettuce, chopped
- 1 tomato, sliced
Directions
Preheat your Blackstone griddle to medium heat. Cook 2 slices of bacon per sandwich until crispy. Remove and drain on paper towels, leaving the bacon grease on the griddle.
Mix ketchup, mustard, mayo, sweet relish, and Whiskey Burger Seasoning in a bowl. Set aside.
Form the beef into 3 oz. balls. Increase the heat to medium-high and coat the griddle with bacon fat. Place the beef balls on the griddle, smash them flat, and cook. Season, flip, and add a slice of cheese to each patty. Cook until the cheese melts.
On a separate zone of the griddle, melt butter over medium heat. Place two slices of Texas toast in the butter, top with cheese, and add another slice of toast on top. Cook until both sides are golden brown, adding more butter as needed.
Spread sauce on the grilled cheese. Layer with lettuce, tomato, a beef patty, bacon, another patty, red onion, more bacon, and top with another grilled cheese. Press lightly, remove from the griddle, and enjoy!
