Heat your Blackstone to medium heat and melt 1 tablespoon of unsalted butter. Toast one side of each slice of bread on the griddle.
Build your sandwich as follows: On one slice of bread, spread 1-2 tablespoons of softened goat cheese. Squeeze a bit of lemon juice over the goat cheese. Layer 2 slices of gouda cheese on top. Add a small handful of arugula, followed by tomato slices seasoned with a pinch of salt and pepper. Place 2 slices of prosciutto and 2 slices of Vermont cheddar cheese. Top with another slice of toasted bread, toasted side facing down.
Melt the remaining tablespoon of butter on the griddle. Cook the sandwich in the melted butter on both sides until the cheese is melted, gooey, and the bread is toasted and golden.
Slice the sandwich and serve it hot.
