Preheat the Blackstone Griddle to low heat.
Drizzle olive oil on the griddle top and place the sausages on it.
Maintain low heat and roll the sausages every few minutes, adding more oil as needed.
Season the sausages with salt, pepper, and garlic to taste.
Thinly slice the green bell pepper and onion. In another part of the griddle, add some oil and the sliced vegetables. Adjust the heat if necessary, and season with salt, pepper, and garlic. Stir the veggies as they cook.
Cut a V-shape out of the hoagie rolls and place them on the griddle to warm. Ensure not to cut the rolls all the way through to keep them capable of holding the sausages.
Remove the sausages from the griddle when their internal temperature reaches 160 degrees.
Place one sausage in each roll and top with marinara sauce and sautéed veggies.
Optional: Some enjoy adding mozzarella and warm marinara sauce on top of these sandwiches. Enjoy!
