Optional: Monterey Jack, Gouda, or your favorite melting cheese
Directions
Preheat your griddle to medium-high heat.
Spread a thin, even layer of butter on one side of each slice of bread.
Place two slices of bread on the griddle, butter-side down.
Pat the kimchi dry to remove excess moisture, then divide it evenly between the two slices of bread.
Top the kimchi with the cheddar cheese, followed by the Emmental cheese.
Place the remaining slices of bread on top with the buttered side facing up.
Cover the sandwiches with a melting dome or lid to help the cheese melt evenly. For extra steam, add a small splash of water to the griddle beside the sandwiches before covering.
Cook for 2–3 minutes, or until the bottom slices are golden brown and crisp.
Carefully flip the sandwiches and continue cooking until the second side is golden brown and the cheese is fully melted.
Remove from the griddle and let rest for 1 minute.
