Preheat the griddle to medium-high and drizzle with avocado oil.
Add the broccoli, zucchini, tomatoes, and onion to the griddle. Season with oregano, paprika, and Mrs. Dash, then splash with water to steam and toss well. Cook until the vegetables are softened, about 5–8 minutes.
On the other side of the griddle, drizzle oil and spread evenly. Place a sheet of parchment paper on top, drizzle a little more oil, and lay the fish filets on the parchment. Season with paprika, pepper, and Mrs. Dash.
Cook the fish for 2–3 minutes per side, flipping carefully until cooked through.
In the center of the griddle, add the rice with a splash of water. Toss gently and allow it to steam until warmed.
Assemble the dish by layering rice first, followed by vegetables, then cod.
Squeeze fresh lemon juice over the top and drizzle with balsamic glaze. Serve immediately or pack into a to-go container.
