Lumberjack Breakfast Sandwich
Recipe by Robert Rose - 2022 Great Griddle Off Contestant

Ingredients:
- 1 extra large jalapeno cheddar bagel
- 2 frozen hash brown bars
- 4 eggs
- 3 strips bacon
- 1 (6-ounce) breakfast sausage patty
- 3 slices of Colby Jack cheese
- 1/4 small onion, diced
- 1/4 small green bell pepper, diced
- 1/4 small red bell pepper, diced
- Blackstone's Lumberjack seasoning, to taste
- Butter and vegetable oil, for the griddle
Directions:
- Preheat the griddle to medium-low heat. Drizzle oil and butter then toast the bagel to your preference. Set the bagel on a warming rack when finished.
- Increase the heat to medium and put down a little more oil then the hash browns. Season with Lumberjack Seasoning.
- Lay out the bacon strips and sausage patty on the griddle. Flip the hash browns and season with more Lumberjack.
- Once the hash browns, bacon, and sausage are fully cooked, set them on the warming rack.
- Now wipe down griddle and apply a thin layer of oil and turn off heat.
- Beat 2 eggs together in a bowl. Pour the whisked eggs onto the griddle and sprinkle the onions and peppers over the eggs, add 1 slice of cheese, fold like a omelet to fit the bagel and season with a little Lumberjack seasoning.
- Place your folded eggs on top of the hash browns then add the sausage patty, 1 slice of cheese, the bacon, and the last piece of cheese.
- Using the residual heat of the griddle crack 2 eggs close together so they form one and season with, you guessed it, a little Lumberjack seasoning. Place the double yoked over easy egg on top of this Paul Bunyan sized sandwich close the lid and enjoy!
- Is this sandwich over the top? Maybe, but it is sure to satisfy the hungriest of men or women!
