Ingredients
-
1 can Red Bull Original (with sugar)
-
3 chicken breasts, thinly sliced
-
1–2 red bell peppers, diced
-
½ onion, cut into quarters
-
1 bag stir fry vegetables (optional)
-
1 tin pineapple chunks in juice, juice reserved
-
3 tbsp plain flour
-
2 tbsp cornflour
-
2 tsp bicarbonate of soda
-
Cooking oil, as needed
-
Fresh, soft noodles of your choice
-
Soy sauce, to taste
-
Pineapple Sriracha Style Seasoning, to taste
-
Oyster sauce (optional)
-
Chopped chillies (optional)
Directions
In a large bowl, combine the thinly sliced chicken with the bicarbonate of soda, a drizzle of cooking oil, a generous splash of soy sauce, and a light dusting of cornflour. Mix thoroughly and leave to velvetise for 15 minutes.
Preheat your Blackstone griddle to high heat.
Cut the red peppers and onion into evenly sized pieces, approximately 1 inch wide.
Lightly oil the griddle and add the chicken. Cook, turning frequently, until browned and nearly cooked through.
Place a griddle-safe saucepan on the cooking surface. Add a little oil and stir in some of the plain flour to create a roux.
Gradually whisk some of the reserved pineapple juice into the roux until smooth. Add the pineapple chunks to a separate area of the griddle and cook until lightly caramelised.
Add the peppers, onion, and optional stir fry vegetables to the griddle. Cook, tossing frequently, until they begin to soften. Add a splash of water and cover with a basting dome if needed to help steam the vegetables.
Once the chicken is nearly cooked through, combine it with the vegetables and toss until evenly mixed.
Add some Red Bull, soy sauce, and optional oyster sauce to the saucepan. Whisk until combined, then simmer until the sauce begins to thicken. Add more flour if needed, mixing thoroughly to prevent lumps.
Pour a little of the remaining pineapple juice and Red Bull directly over the chicken and vegetables. Continue cooking, tossing frequently, until the liquid reduces to a light, sweet glaze. Add chopped chillies at this stage if desired.
Add the fresh noodles to the griddle and heat through, gently separating them as they warm.
Combine the noodles with the chicken, vegetables, and caramelised pineapple. Sprinkle with Pineapple Sriracha Style Seasoning and toss until evenly coated.
Pour the prepared sauce over the stir fry and mix thoroughly, or reserve it to drizzle over each portion when serving.
Divide the stir fry between two bowls and serve immediately. Don’t forget, Be Good, Do Good, and Eat Good.
