500 g frozen fries (or potatoes of your choice)
350–400 g thick-cut ribeye steak, thinly sliced, fat cap removed and reserved
1 (400 g) tin chopped tomatoes
Chilli seasoning mix, to taste
180 g grated Mexicana cheese, divided
Cooking oil, as needed
Water, as needed
Preheat your Blackstone griddle to medium-high heat, leaving one zone at medium heat for the fries. Lightly oil the cooking surface.
Chop the reserved ribeye fat cap into small pieces and add some to the griddle. Allow the fat to render, then add the frozen fries to the medium-heat zone.
Toss the fries in the rendered beef fat and oil, then cover with a basting dome to help them cook.
Add more of the reserved beef fat to a separate area of the griddle and allow it to render. Add the sliced ribeye steak and cook, tossing frequently, until browned.
Season the steak with your preferred chilli seasoning mix. Add a splash of water and stir until the beef is evenly coated.
Pour the chopped tomatoes over the steak and mix thoroughly. Continue cooking, stirring frequently, until the sauce reduces and thickens into a rich steak chilli.
Check the fries, tossing occasionally to ensure even cooking. Add more rendered beef fat as needed to help them become golden and crispy.
Spread the cooked fries evenly across the griddle and sprinkle with approximately two-thirds of the Mexicana cheese. Allow the cheese to melt, then gently toss to coat the fries.
Transfer the cheesy fries to a serving bowl and spoon the steak chilli over the top.
Finish with the remaining Mexicana cheese and serve immediately.
