Ingredients
- 4 ribeye-cut or bone-in pork chops, about 1 inch thick

1 tbsp Blackstone Essential Blend Seasoning

1 tbsp Blackstone Outlaw BBQ Seasoning

1 tsp avocado oil or other high-heat cooking oil

1 tbsp unsalted butter, for basting

Blackstone Post Dust Finishing Seasoning, optional
- 3–4 ripe peaches, peeled, pitted, and cut into chunks

1 tbsp unsalted butter

2 tbsp packed brown sugar

1 tbsp rice wine vinegar
-
¼ tsp crushed red pepper flakes, or to taste

¼ tsp ground cinnamon

1 tsp minced garlic

Directions
- Peel and pit the peaches, then cut them into a mix of small and large chunks. This allows some of the peaches to soften into the chutney while the larger pieces hold their shape.
Pat the pork chops dry and season both sides with Blackstone Essential Blend and Outlaw BBQ Seasoning.
Preheat your Blackstone griddle to medium to medium-low heat, creating a hotter zone for the pork chops and a slightly cooler zone for the chutney.
Melt 1 tablespoon of butter on the cooler side of the griddle. Add the peaches, brown sugar, rice wine vinegar, red pepper flakes, and cinnamon. Cook for 6–10 minutes, stirring occasionally, until the peaches soften and the mixture becomes thick and glossy.
Lightly oil the hotter side of the griddle and add the pork chops. Cook for about 3 minutes on the first side, or until well browned.
Flip the pork chops and continue cooking, turning occasionally to develop an even crust without burning the seasoning.
During the last minute of cooking the chutney, stir in the minced garlic. Cook just until fragrant, then transfer the chutney to a bowl.
When the pork chops are nearly finished, add 1 tablespoon of butter to the griddle. Turn the chops through the melted butter to baste them and develop a richer crust.
- Cook the pork chops until the thickest part reaches 145°F (63°C). Remove from the griddle and let rest for 3–5 minutes.
Spoon the warm peach chutney over or alongside the pork chops. Finish with Blackstone Post Dust, if desired, and serve immediately.
