Cube the chicken breast and season it with salt, pepper, Tuscan Herb seasoning, and olive oil. Mix well.
Chop the bell peppers, onions, zucchini, and squash into bite-sized pieces.
On the other side of the griddle, heat it up to around 425 degrees. Spread out the seasoned chicken on the griddle to avoid thermal shock. Cook the chicken until it's almost done.
Once the chicken is nearly cooked, mix the sautéed vegetables with the chicken and add the precooked penne noodles. Mix everything well on the griddle and add the cherry tomatoes.
Pour in the Italian dressing and incorporate it thoroughly. Add the grated Parmesan cheese and give it a good mix.
Transfer the mixture to a serving plate and lightly drizzle some more dressing and Parmesan on top.
