Set the griddle to low heat and lightly spray it with avocado oil.
Add the frozen peppers and onions to the griddle. Season with the Essentials Blend and cook until they start to soften.
Stir in the chopped chicken and sprinkle with Citrus Mojo seasoning. Sauté together until everything is heated through.
Shift the chicken and veggie mixture to a cooler area of the griddle to keep warm.
Lightly spray the griddle again with avocado oil. Lay tortillas flat on the hot surface.
On one half of each tortilla, layer cheese, then the chicken and veggie mix, then more cheese. Fold the empty half of the tortilla over the filling to form a half-moon shape.
Cook on both sides until golden brown and crispy, and the cheese is fully melted.
Remove from the griddle, slice into wedges, and serve with your favorite toppings (sour cream, salsa, guac, etc.).
