Heat the griddle to 360˚. Add ½ tsp oil. Squeeze the excess liquid out of the spinach and sauté it on the griddle along with the shallot and garlic. Season with Essential Blend seasoning to taste. Sauté for 2-3 minutes, then add the crumbled Feta cheese and mix to combine.
Mix room temperature butter with 1 tsp Tuscan Herb seasoning. Spread the seasoned butter on one side of each slice of bread.
Place each slice of bread, butter side down, on the griddle. Top each slice with ¼ cup shredded mozzarella. Divide the spinach mixture in half and spread each portion on a slice of bread. Sprinkle red pepper flakes over the spinach mixture to taste. Top with an additional slice of bread.
Cook on both sides until the bread is golden brown.
