Strawberry Rolls with Lemon Icing

Ingredients
- 1 package frozen ready dough (I used Bridgford brand from the freezer section)
- 1 jar Strawberry preserves
- 1 lemon
- 2 cups powdered sugar
- Coconut oil spray (or use butter)
- Flour for dusting the cutting board
Directions
Place all 3 frozen loaves of dough in a proofing box and set aside in a warm area. Allow the dough to thaw and rise for a few hours.
Once the dough has risen, place it on a floured surface, pinch all the edges together, and use a rolling pin to roll it out into a large rectangle. Spread a thin layer of strawberry preserves over the dough. Zest 1 lemon and sprinkle it all over the layer of preserves.
Roll the dough up into a tight log. Cut the dough into 12 even rolls and place them in a greased pan. Allow them to rise for 30 minutes to 1 hour.
Preheat the Blackstone air fryer to 375˚ on the “bake” setting. Cook the rolls in the air fryer for 25 minutes. If the tops begin to brown too quickly, remove them from the air fryer, cover with aluminum foil, and finish cooking the rolls covered.
While the rolls are baking, whisk together 2 cups of powdered sugar and the juice from 1 lemon. Drizzle the icing over the top of the rolls as soon as they're finished baking.
