Sweet and Tangy Chicken Skewers

These sweet and tangy chicken skewers are delicious and easy to make. You can use them as an appetizer or a main course. This recipe uses thin strips of chicken breast cutlets. Cooking times will vary depending on the cut and thickness of your chicken. If you're using whole raw chicken breast fingers, the cooking time will be longer than thinner strips.

Ingredients
- 2 limes
- 1 cup of cooking oil (avocado or olive oil recommended)
- 1-2 Tbsp minced garlic paste or fresh garlic cloves
- 1-2 Tbsp ginger paste
- 1 cup Bachan's Sweet Honey Japanese Barbeque Sauce (or any Bachan's sauce)
- Salt
- Skewers, around 6 inches in length
- Chicken breast strips, thinly sliced
- Green onions, diced
- Sriracha Hot Chili Sauce
Directions
Grate or zest the limes. In a blender, combine the lime zest, cooking oil, garlic paste, ginger paste, Bachan's sauce, and salt (to taste). Blend until smooth. Place the chicken strips in a bag or container, pour the marinade over the chicken, and ensure all pieces are well-coated. Add more of the ingredients if necessary. Cover and refrigerate for at least 30 minutes, up to 4 hours.
When the chicken is almost done marinating, turn the Blackstone griddle on to medium heat.
Thread each piece of chicken onto a skewer. Place the skewers on the oiled griddle top. Add extra marinade on the chicken if desired. Flip as needed to get a nice sear on each side. Cooking time will vary based on the thickness of the chicken pieces.
Remove the chicken from the griddle when fully cooked. Drizzle with sriracha and top with diced green onions. Enjoy!
