Tequila Lime Chicken Thighs

Ingredients
- 2 lbs chicken thighs
- Blackstone's Tequila Lime Seasoning
- 1 cup Quinoa
- 2 cups Chicken Bone Broth
- 1 Avocado
- 1 cup Plain Greek Yogurt
- 1 tsp Garlic Powder
- 1 tsp Sea Salt
- Juice of 1/2 Lemon
Directions
In a medium saucepan, prepare quinoa and bone broth according to the instructions on the quinoa package.
Coat both sides of the chicken thighs generously with Tequila Lime Seasoning.
Cook the thighs on medium heat until they reach an internal temperature of 170 degrees.
Peel and pit the avocado, then place it in a bowl along with the Greek yogurt, garlic powder, sea salt, and lemon juice.
Mix the ingredients with a fork or in a food processor until smooth. If needed, adjust the sauce's consistency by adding a little water to your liking.
Plating:
On a plate, create a bed of quinoa.
Slice the cooked chicken thighs and arrange them over the bed of quinoa.
Drizzle the avocado sauce over the chicken.
